Brisket and Cold Brew
If you have never cooked a brisket you may not know that the main ingredient is insomnia.
Barbecue is in this project because of the award-winning single “Sauce That” (five awards at the AI International Film Festival). Coffee is in it because of a song called GAMFC. The two ended up in the same place for reasons that are entirely practical.
The 4am problem
A big packer brisket can run twelve to sixteen hours, sometimes longer. Work backwards from when people are eating and you land on a start time that is genuinely unreasonable. You are up before four, in the dark, getting a fire stable.
And then you are awake for all of it. You cannot leave a fire. You are managing temperature, watching smoke colour, resisting the urge to open the lid, waiting out the stall. It is a long, slow, mostly undramatic act of attention.
This is why barbecue and coffee are permanently attached to each other. Not as a flavour pairing — as a logistics problem.
Why cold brew specifically
Three practical reasons, learned the way everyone learns them.
- Hot coffee next to a fire is absurd. You are already standing beside a 250°F steel box in Texas. A hot cup is not what the situation calls for.
- A pot goes stale; a can does not. Coffee brewed at 4am is undrinkable by 7. A sealed can in a cooler is the same at hour nine as it was at hour one.
- The dose is known. Over a sixteen-hour cook you want to know what you are taking. 220 mg a can, printed on the back, no guessing.
There is also the acidity thing. Twelve hours of coffee on a mostly empty stomach is rough, and cold brew is lower in perceived acidity than a hot brew because of how the extraction works. Your stomach notices by hour eight.
What goes in the cooler
For a full cook, a twelve-pack is not an unreasonable amount of planning. Free shipping, and it survives ice better than anything you brewed yourself.
For the long cook
12-pack $120 with free shipping. Use code GAMFCGANG at checkout for $99. In San Antonio, pickup on October 24 is $7.77 a can with no shipping.

You eat at four in the afternoon having been awake for twelve hours, and you fall asleep at eight like someone switched you off. The coffee was for the cook, not for the meal. Nobody drinks cold brew with brisket.
Although at $7.77 a can, you can do what you want.
